Spicy Jambalaya

[Gluten + Dairy Free]

Ingredients |

  • 1 pack sausage

  • 46 oz chicken stock

  • 3-4 tbsps olive oil

  • 1 onion, diced

  • 1 green bell pepper, diced

  • 1 banana pepper, diced

  • 1/2 red chili pepper, diced

  • 1 tbsp minced garlic

  • 1 1/4 cup risotto

  • 1 small can tomato paste

  • 4 tsps heavy cream

  • 4 tsps cajun seasoning

  • 2 tsps onion powder

  • 3 tsps garlic powder

  • 2 tsps chili powder

  • 2 tsps paprika

  • 1.5 tsps ancho chili pepper powder

  • 1/2 tsp black pepper

Instructions |
1) Add the olive oil to a pan over medium high heat and cook the onions & peppers together until softened. Add in the minced garlic as well.

2) In a separate pot, add in 1 cup of hot chicken broth and add in the dry risotto. Cook on medium high heat until the liquid has dissolved. Repeat 2-3 more times until the risotto is fully cooked.

3) Add the sliced sausage into the pan with the onions and garlic to cook in.

4) Add the can of tomato paste and can of diced tomatoes.

5) Once the risotto is fully cooked, add it into the other pan with the onions, peppers and sausage.

6) Add in all of the seasoning & reduce the heat to low.

7) Mix everything together and let it simmer for a few minutes before serving.
