Butternut Squash

A fall favorite in our home for sure! A butternut squash can be used so many ways and all of them are equally delicious!

If you’re looking for a way to incorporate them into a dish, use them as a side or on top of a salad! My favorite is my winter arugula salad. The butternut squash is really the star of the show!

Instructions |

  • Pre-heat your oven to 400 degrees.

  • Cut and peel the butternut squash - and there are many ways to do it. You can leave the skin on if you’d like but most people prefer to peel it! I personally love to cut it like you would a cucumber, into 1" thick circles. Then I will cut it into cubes and trim off the skin.

  • Place the 1” cubes onto a baking tray and toss them with some olive oil.

  • Sprinkle a bit of salt, pepper, onion powder and garlic powder & then toss to make sure all of the pieces are covered equally.

  • Drizzle pure maple syrup or honey over the butternut squash! This adds such a delicious flavor once baked. Make sure you mix it around and toss them to get the sweetness on all of the pieces.

  • Roast them in the oven for about 25-30 minutes or until they are soft and cooked all the way through.
