Beets

Ever walked by a bundle of fresh beets at the grocery store but never knew how to prepare them in a delicious way?

Don’t immediately skip past this jewel of a vegetable! When prepared right, a fresh beet will make you throw away any jars of beets you have hiding in your pantry.

Preparation |

  • Take your fresh bunch of beets and rinse them thoroughly in the sink.

  • Moving the clean beets to a cutting board, cut off the leafy stems but leave about 2-3 inches of stem still attached to the beet.

  • Bring a pot of water to a boil and salt before adding the beets.

  • Add your beets into the boiling water and reduce to a medium-high heat.

  • Cook for about 20-30 minutes, depending on the size of your beets.

  • Remove from the water once you can easily pierce the beet with a fork or knife.

  • Carefully peel the skin off of the beets while they are still hot. Its easiest to do this step while running warm water over the beet as you peel it. Not only does it make the peeling process less messy, but it also helps to remove the skin.

  • Transfer the boiled and skinless beets to the cutting board and cut of the remaining stem.

  • Carefully cut the beets into 1 inch chunks.

  • Place the cubed beets onto a baking tray and lightly season them with some salt. If you want to add a little more flavor, try a pinch of garlic powder!

  • Roast the beets in the oven at 375 degrees for another 15 minutes.

  • Serve & enjoy!
